We had the Everglades Tour in January, 1st of 2020, booked by the concierge of the Mandarin Oriental Miami for more than 1000$. The French speaker guide was nice, but the tour was not authentic enough. We loved the private airboat tour but we barely saw any alligators... We then visited the Indian Village which is kind of a fairground about Everglades, with an old and boring museum. Had the opportunity to hold a baby alligator in my hands, was amazing! The really bad part of the experience is that I booked the tour in a brand new Cadillac Escalade (the true American experience for French people like us!), but we finally had a minibus instead, for two... The whole experience was not that bad, but overpriced for what it was. We were offered a small refund after complaining about that.
