I had 11 knives and a pair of kitchen shears sharpened by Joe of Pro Chef. Initially the feel of the knives did not have the level of bite I was hoping for but a few passes on my honing steel and a fantastic, razor sharp edge was revealed. Ive been less than impressed with other knife sharpening services in the Chaotte area and Im glad to say my search is over. All of my blades will go to Pro Chef from now on.
